Tomorrow we are going on a trip so I wanted to make something with the boys for our long journey. We are trying to eat healthily and cutting out all processed foods from our diet, so I had to alter this recipe but they still came out great. We used organic wheat bran and organic flour as well as replacing the oil for applesauce. We have dates readily available in our home all year round Alhamdulillah but if you do not have any you can use blueberries or raisins, or anything else you like as the recipe is quite versatile.
1 1/2 cups wheat bran
1 cup buttermilk (we did not have any so used one cup of milk with about 1 tbsp. of lemon juice)
1/3 cup applesauce
2/3 cup brown sugar or honey
1/2 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup dates
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups .
2. Mix together the wheat bran and buttermilk, then let stand for 10 minutes.
3. Beat together the applesauce, egg, sugar and vanilla and add to the buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in the dates and spoon batter into prepared muffin tins.
4. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
